Aldersyde Farm – Tarkastad Karoo Leg of Lamb Mince Burgers

Here is the last of my recipes for this week-end. In the previous mood board talking about the recipes inspired by the lamb from Aldersyde Farm – Tarkastad Karoo, I said I’d also be trying out lamb burger patties for Sunday. So I did & I have to say I have never tasted a better lamb burger, blown away.
I took 1kg of lamb mince, added 2 Mooberry free range eggs, 1 finely chopped onion, 3 cloves garlic finely chopped, 1/4 cup chicken stock, 2Tb lamb fat, 1tsp finely chopped fresh rosemary, lemon zest from 1 lemon, 1tsp wholegrain mustard, 1/3 cup grated Gourmet Greek pecorino (a good Parmesan will also work, I just don’t have a SA one from grass fed cows but I’ll find one eventually), 1tsp chopped parsley & 1TB worchestire sauce.
Mix all together & get your hands into it & messy, it’s the only way. Leave the mixture to stand for an hour. Shape into 150g patties.
Heat some olive oil on a griddle pan and brown on both sides. Then cook for approx 15 minutes each side, turning every 5 odd minutes.
Serve on organic greens of choice.
Dollop over some of the lemon yoghurt dressing in previous post for the kebabs (1 cup Gourmet Greek yoghurt, juice of 1 lemon, 2 garlic cloves finely chopped, lemon zest & sea salt), top with Gourmet Greek or Beatrix Mountain Goat farm feta & the ClanwilliamsOrganics sprouts I’ve been raging on about.
You end up with 8 best quality burger patties, with everything all in at approx a cost of R25 each and for a Gourmet burger like this in a restaurant you’d pay far more & not get the comfort of such good ingredients from these good farms. Crank up your favorite music in the kitchen, pour your drink of choice & enjoy making them, the smells & happiness will warm and draw everyone into the kitchen. Blissfully rewarding.
