CTOrganics Pastured Chicken Braai Recipe
A delicious pre-marinade to use when putting chicken on the braai or baking.
CTOrganics Pastured chicken is from a farm in the Midlands using the Joel Salatin mobile chicken system.
The chicken in summer has a high percentage of grass and weeds in it, supplement feed does not contain antibiotics or growth promoters and the chicken is not brined.
It does benefit from being pre-marinaded. This is as it will never be as tender as conventional chicken that is brined, that is raised on feeds that contain antibiotics and growth promoters and from chickens who do not have the same type of movement.
If you are going to braai these pieces – this pre-marinade takes them to new heights, the yoghurt tenderises and penetrates the chicken with the coconut water and lemon and it’s just beautiful. If you aren’t braaing them, you can use this too as a cook in sauce and bake and it’s just as delicious.
- 2 cups of Gourmet Greek yoghurt
- Juice of 1 lemon or 2 limes (lime is fantastic with this)
- Grate in rind from one lemon or 1 lime
- Add fresh herbs of your choice
Coat the chicken and leave to marinade overnight or for a minimum of 4 hours.
Then remove and braai.
Or leave the chicken pieces in the marinade and bake at 180 degrees for 40 minutes.
Either way, this transforms the chicken.
You can also add tandoori spice to this marinade and have tandoori chicken pieces if you’re keen.
