Griddled Courgette, Bolognaise, Feta and Watercress

Slice courgettes thinly on a mandolin.
Heat a griddle pan to high heat and place the courgettes in, not touching.
Griddle until you get chargrill marks, remove and place them on a platter, again not touching so that they don’t steam.
Drizzle over some olive or avocado oil, some fresh lemon, torn up mint, salt and pepper.
Add over pre-made bolognaise, some goat’s milk feta and some herbs and greens of choice – I used watercress, wild rocket and parsley.
My family goes mad when I make this, it’s so flavourful and delicious.
