New Harmony Roast Chicken, Roast Veg and Sweet Potato, Coriander and Pepper Salad

I thought I’d share what we had for supper with you this evening seeing as though it was all mostly Organic Emporium produce from our favourite real sustainable farms and it might help you with ideas for week night suppers. We roasted a New Harmony whole chicken – really good chicken, and large, there is still enough left over for everybody to take full lunches with left over salad and veggies too to work and school, or a second meal tomorrow.
We roasted the chicken my usual way – put lemon, onion, garlic, herbs, butter and olive oil in the cavity, rub olive oil, salt and pepper onto the outside of the chicken and roast for an hour and a half on 180 for a 1.5kg bird, if it’s closer to 1.8kg’s make it an hour and 45 minutes. Closer to 2kg’s – 2 hours.
Baste regularly and when it’s done, leave it under foil to rest and then heat the juices in a pan, add either some home made chicken stock or a cup or 2 of dry white wine and reduce, add a knob of butter at the end,delicious. Cammy says she always adds cream and it makes her gravies taste heavenly.
We also did some roast potatoes and carrots just in olive oil and a salad with lettuce leaves, roast sweet potatoes, roast peppers, coriander, some sesame seeds and a splash of sesame oil and a drizzle of honey. Gorgeous.
