Pumpkin Leaves – Bunch
Organically and locally grown seasonal pumpkin leaves. Par-boil for 5 minutes – then stir-fry with garlic, chilli, olive oil – add cashew or macadamia butter and some coconut cream for a delicious, nutrient dense dish.
Rare and ancient treasure – you won’t find them in stores but you do find them with local, traditional growers – societies healers and environmental warriors.
They offer a wide array of nutritional benefit – high in vitamin c, iron, fire, vitamin a, essential fatty acids and phytochemicals – they support the immune system, red blood production, protection of colon cancer that fiber provides, supple skin, alleviation of rheumatoid arthritis pain, dental health support (calcium, vitamin D & phosphorous) and helps prevent ageing (copper).
Eaten in Africa and Asia for eons – they taste like a combination of spinach, green beans, asparagus and kale.
