If you want a hearty meal for this evening but haven’t planned anything and need to cook in a relative rush, order the beetroot thyme and onion roast from Ambersky Farm – and the cut up pumpkin and some lamb chops or beef steaks….
Pre-heat your oven to 180 degrees or 200 degrees, throw the pumpkin in a roasting dish, drizzle over some olive oil, salt and pepper, chopped rosemary if you have and place in the oven, do the same in a separate dish with the beetroot, onion and thyme, olive oil, salt and pepper all that is required – if you’re doing lamb chops – you can place those in a dish too, drizzle over some olive oil, rosemary, lemon juice, salt and pepper and chopped garlic and then just put all of them in the oven at the same time. That’s not even 20 minutes prep and then you can sit back and have it all come out of the oven in 40 minutes. 2 roast veg dishes with lamb chops, easy peasy…
If you want to do beef rather – try the same deal but instead of the lamb – place the fillet in a dish, cover with a layer of dijon mustard, some of Mandy’s grass fed butter, a drizzle of olive oil, some lemon juice and salt and pepper – leave it all in for 50 minutes – the veggies will do fine at 50 minutes too, they’ll just be a bit crisper, let the fillet rest for 10 minutes before serving…
